Catalog Description : This course looks at how immigrant communities form culinary traditions, networks, and memories across various global histories and geographies. We will explore physical and digital spaces like dining tables, restaurants, food trucks, blogs/vlogs, and more. Weekly topics will include: the genre of cookbooks, the gendered labor behind cooking, notions of authenticity, transnational markets, and memory preservation via recipes.
